Sweet Potato Pie Sticks

  • Ingredients

    • Satsumaimo (Japanese sweet potato): 150 g (5.3 oz), about 1/2 medium potato
    • Amazake (non-alcoholic sweet fermented rice drink made from rice and rice koji): 50 mL (3 Tbsp + 1 tsp)
    • Butter: 15 g (1 Tbsp)
    • Frozen puff pastry sheets (frozen pie sheets), thawed: 2 sheets
    • Egg yolks: 2
    • Black sesame seeds: to taste
    • Granulated sugar: to taste
    • All-purpose flour (for dusting): as needed
  • Preparation

    • Peel the sweet potato and cut into bite-size pieces. Soak in water for about 5 minutes. Drain, place on a microwave-safe plate, and microwave for about 5 minutes, or until tender.
    • Mash the sweet potato until smooth. Add the butter and mix well. Then add the amazake a little at a time, mixing thoroughly until evenly combined.
    • Lightly dust your work surface with flour and roll out one puff pastry sheet. Spread the sweet potato mixture evenly over it, then place the second puff pastry sheet on top.
    • Cut into stick-shaped strips, twist each strip, and arrange on a baking sheet. Brush with egg yolk, then sprinkle with granulated sugar and black sesame seeds. Bake in a preheated 200°C (392°F) oven for 12 minutes.

Notes

Amazake can sometimes be found in Japanese grocery stores; if unavailable, substitute an equal amount of milk plus 1–2 teaspoons sugar, or use sweetened condensed milk diluted with a little milk to a pourable consistency.
