Amazake Ginger Ale

Give your usual amazake a more grown-up twist. For the carbonation, unsweetened sparkling water is recommended. Add grated ginger directly, or if you don’t like the fibrous texture, use only the squeezed ginger juice.

  • Ingredients

    • Amazake (sweet, non-alcoholic Japanese drink made from rice and rice koji; recipe uses a packaged type such as "Koujiya Satomura" rice & rice-koji amazake): 150 ml (5.1 fl oz)
    • Sparkling water (unsweetened): 125 ml (4.2 fl oz)
    • Fresh ginger: to taste
  • Preparation

    • In a glass, combine the amazake, sparkling water, and grated ginger. Stir gently to mix, and serve.
    • If you’re sensitive to the ginger’s fibers or strong heat, squeeze the grated ginger and add only the ginger juice instead.

Notes

If you can’t find amazake, look for it at Japanese/Asian grocery stores (often refrigerated or shelf-stable). In a pinch, you can substitute a lightly sweetened rice drink, though the flavor will be different.
