Sweet Potato Pie Sticks

A delightful treat combining sweet potato and flaky pastry, perfect for a snack or dessert.

Cooking time: Approximately 30 minutes

Servings: Makes 8 sticks

  • Ingredients

    • Sweet potato: 1/2 piece (150g or 5.3 oz)
    • Amazake (a sweet fermented rice drink): 50ml (1.7 fl oz)
    • Butter: 15g (1 tablespoon)
    • Frozen puff pastry sheets: 2 sheets
    • Egg yolks: 2
    • Black sesame seeds: As needed
    • Granulated sugar: As needed
    • Flour (for dusting): As needed
  • Preparation

    • Peel the sweet potato and cut it into bite-sized pieces. Soak in water for about 5 minutes, then place on a microwave-safe dish and heat in the microwave for about 5 minutes.
    • Mash the sweet potato until smooth, then add the butter and mix well. Gradually add the amazake while mixing thoroughly.
    • Dust a surface with flour and roll out the puff pastry sheets. Spread the sweet potato mixture over one sheet, then place the other sheet on top.
    • Cut into stick shapes, twist them, and place on a baking sheet. Brush with egg yolk, sprinkle with granulated sugar and black sesame seeds, and bake in a preheated oven at 200°C (392°F) for 12 minutes.

Notes

If you cannot find amazake, you can substitute with a mixture of rice milk and a little sugar, though the flavor will differ.
