
Stir-fried Pork and Shishito Peppers with Amazake Miso
A savory and slightly sweet stir-fry featuring tender pork and shishito peppers, enhanced with the unique flavors of amazake and miso.

Ingredients
- Pork slices (thinly sliced pork, often used in Japanese cooking): 200g (7 oz)
- Shishito peppers: 10 pieces
- Grated garlic: 1/2 teaspoon
- Oil: As needed
- Amazake (a sweet fermented rice drink made from rice and rice koji): 3 tablespoons
- Miso (red miso used in the photo): 2 tablespoons
- Sugar: 1/2 teaspoon

Preparation
- Trim the tops of the shishito peppers slightly and make a slit lengthwise in each. Cut the pork slices into bite-sized pieces.
- Heat oil in a frying pan over low heat and add the grated garlic. Once the garlic becomes fragrant, increase to medium heat and add the pork slices, stirring to cook.
- When the pork changes color, add the shishito peppers and continue to stir-fry.
- Once the shishito peppers are cooked through, add the mixture of amazake, miso, and sugar. Stir everything together until well coated, then serve.
Notes
If shishito peppers are unavailable, you can substitute with padron peppers, though the flavor will be slightly different.
