Savory Cake

A delicious savory cake filled with vegetables and ham, perfect for a light meal or snack.

Cooking time: 45 minutes

Servings: For a 20cm (8-inch) pan

  • Ingredients

    • Cake flour: 180g (1 1/2 cups)
    • Rice flour: 20g (2 1/2 tablespoons)
    • Baking powder: 2 teaspoons
    • Unsalted butter: 100g (7 tablespoons)
    • Eggs: 2
    • Milk: 150ml (2/3 cup)
    • Grated cheese: 1 tablespoon
    • Shio koji powder (a fermented seasoning): 1 small packet
    • Pumpkin: 150g (5.3 oz)
    • Okra: 100g (3.5 oz)
    • Ham: 50g (1.8 oz)
    • Onion: 1/2
    • Olive oil: 1 tablespoon
  • Preparation

    • Cut the pumpkin into 1cm (0.4 inch) cubes, slice the okra, cut the ham into 1cm (0.4 inch) cubes, and finely chop the onion. Place them in a microwave-safe dish, drizzle with olive oil, and microwave for 3 minutes. Let cool.
    • In a bowl, cream the butter, then add the eggs, milk, grated cheese, and shio koji powder, mixing well after each addition.
    • Sift the cake flour, rice flour, and baking powder into the mixture from step 2, and mix with a rubber spatula.
    • Add the cooled vegetables and mix well.
    • Line a 20cm (8-inch) pan with parchment paper and pour in the batter.
    • Bake in a preheated oven at 180°C (350°F) for 30 minutes.

Notes

If you cannot find shio koji powder, you can substitute with a pinch of salt and a teaspoon of soy sauce for a similar umami flavor.
