
Pan-Fried Salmon

Ingredients
- Fresh salmon fillets: 2 fillets
- Shio koji (a Japanese seasoning made from fermented rice, salt, and water): 2 1/2 tablespoons
- Vegetable oil: 2 teaspoons
- Assorted vegetables for garnish: as needed

Preparation
- Pat the surface of the salmon dry and coat it with shio koji. Wrap it tightly in plastic wrap and marinate in the refrigerator overnight.
- Heat vegetable oil in a frying pan over medium heat and cook the salmon for 5 minutes. Flip the salmon, reduce to low heat, cover with a lid, and cook for an additional 5 minutes.
- Serve on a plate with assorted vegetables.
Notes
If shio koji is unavailable, you can substitute with a mixture of salt and a little sugar, although the flavor will differ.
