Broccoli with Shio Koji

A simple and flavorful dish combining broccoli and tuna with the unique taste of shio koji.

Servings: Serves 3

  • Ingredients

    • Broccoli: 1 head (400g, about 14 oz)
    • Canned tuna: 1 can (80g, about 2.8 oz)
    • Shio koji (a fermented seasoning made from rice malt and salt): 2 and 1/2 tablespoons
    • Black pepper: To taste
  • Preparation

    • Cut the broccoli into bite-sized pieces and boil until tender.
    • Drain the canned tuna.
    • Mix the broccoli, tuna, and shio koji together in a bowl.
    • Sprinkle black pepper to taste, if desired.

Notes

If shio koji is unavailable, you can substitute with a mixture of miso paste and a little water, though the flavor will differ.
