Amazake Chocolate Cake

Cooking time: 30 minutes (excluding baking time)

Servings: (15 cm round cake)

  • Ingredients

    • Milk chocolate bar: 2 bars
    • Milk: 100ml (3.4 fl oz)
    • Eggs: 2
    • Sukkiri Nomeru Chokatsu Amazake (a type of easily drinkable fermented rice beverage): 100ml (3.4 fl oz)
    • 【A】 Cake flour: 120g (4.2 oz)
    • Baking powder: 1 teaspoon
    • 【Cream】 Sukkiri Nomeru Chokatsu Amazake: 25ml (0.85 fl oz)
    • Heavy cream: 100ml (3.4 fl oz)
    • Sugar: 5g (1 teaspoon)
    • Powdered sugar: as needed
  • Preparation

    • Place the chopped chocolate and milk in a microwave-safe bowl and heat in the microwave (600W) for 1.5 minutes without covering. Stir well.
    • Add 100ml of amazake and beaten eggs to the chocolate mixture and mix well with a whisk. Sift in the ingredients from 【A】 and mix again.
    • Pour the mixture into a baking pan lined with parchment paper. Tap the pan on the counter to remove air bubbles.
    • Bake in a preheated oven at 170°C (340°F) for 25-30 minutes.
    • Whip the heavy cream with sugar until soft peaks form, then add amazake and mix.
    • Cut the cake into serving sizes, place on a plate, and serve with powdered sugar and cream. *If a skewer inserted into the cake comes out with batter, bake for additional time.

Notes

If you cannot find amazake, you can substitute with a mixture of rice milk and a small amount of sugar, though the flavor will differ.
